This Goat Cheese Salad with Walnuts and Pears is a simple lunch salad, or a side to a more substantial dinner dish. Thrown together in a few minutes, sprinkled with olive oil and salt – voila. The dried cranberries are really good here – chewy sweetness against the creamy and savory goat cheese, earthy toasted walnuts and juicy pear slices.Good food doesn’t have to be complicated.
- 4 cups mixed greens
- ¼ cup toasted walnuts, crumbled
- ¼ cup dried cranberries
- ½ cup soft goat cheese, crumbled
- olive oil
- salt to taste
- Set a medium skillet over medium heat and add the crumbled walnuts. Dry-toast, stirring and turning often, until light brown, but not burned.
- Toss with the rest of the salad ingredients and drizzle with olive oil. Season to taste.
