Let's talk about chicken and rice in bowls. While I have no issues thinking up what to cook for dinner, breakfast and lunch ideas have me hitting a mental wall. I'm back from a small vacation and, as these things always happen, it was too short. I'd prefer a lifetime on Salt Spring Island, not mere 5 days - tease. A simple dish for lunch - fresh and tasty. If you read some of my previous posts, I lamented my inability to find pea shoots here in Calgary. I discovered The West Coast Chop Salad at Original Joe's, a pub-restaurant type hangout popular here in Canada. It was so good that I made note of the ingredients on the menu and decided I need to give it a try at home. The original didn't include chicken, as it was only meant as an appetizer, but you can easily make a dinner entree this way. The original had pea shoots. Where will I find pea shoots in January, I don't know (they obviously found them somewhere), maybe sprout my own? Hmm...
