I picked up some white-fleshed sweet potatoes this week, as I had a hunch they would be amazing with coconut milk. White sweet potatoes are starchier, smoother, sweeter, and more creamy than their orange cousins, yet their texture holds up well even after long simmering. They are slightly slimmer than orange sweet potatoes, and have light brown skins. They're often mislabeled as "yams", even though they're just a different variety of the sweet potato.
