Welcome to my empanada world. I recently became obsessed with learning to make them, curled seal and all. The good news is, I tested the recipe three times (that's over 100 empanadas over 3 days... and none are left over), so if you stick with me you can easily develop an empanada obsession, too... Empanadas are a South American snack, and each country and region has their version and specialty. What I love about them is how easy it is to adapt a filling - whether sweet, or savory. We don't talk enough about chocolate - and I'm going to fix that right now, especially when the prep to belly time here is 30 minutes - that's right. This Chocolate Cake with Cocoa Buttermilk Ganache is moist, chocolaty and just lightly spongy, with melted chocolate oozing down the sides...oooooommmmm... It's a chocolate lover's fix... that time of the month fix... or, because you just want to stay in bed and eat cake kind of fix... or all of the above.
Our farmer's markets are overflowing with late summer produce, especially plums and peaches from British Columbia. I made a few versions of this custard cake over the season, alternating with using cherries, pears, apples and raspberries. Pure bliss. There are some tricks and pointers, which I will now explain... Really really important: don't over-beat the custard batter, which make the cake tough and chewy, rather than soft and pillowy. I made this mistake a few times when cutting my teeth [Read more...]
Look, deja-vu! I know, I know. Another strawberry dessert. This was never even meant to make it here, sort of a culinary afterthought on one lazy evening. I have a written recipe for a cobbler cake that I've been making for ages, I'm just unable to commit it to my permanent memory and end up having to look for that recipe over and over again. That won't happen anymore now! This is a summer cake at it's simplest. I made it before using all sorts of summer fruits: peaches, apricots, [Read more...]
Hello, my lovely readers. It's time to be bad, but only a little, I promise. Remember how I told you that I learned to make creme fraiche and I couldn't stop eating it? Well, this time it's much worse because I learned to make ricotta tiramisu. A healthy one, depending how you look at it - not too great if you eat the entire tub. Which, by the way, if I make long-winded posts about some freaking orchestras again, could you please lightly nudge a calendar my way? I don't keep that calendar. [Read more...]
Every now and then, I stumble across an intriguing food idea - the kind I realize might be a monumental failure, but I end up making anyway out of sheer nerd-like curiosity. And once in a blue moon, I'm wrong about the bad assumptions (isn't that just a plain 'ol slice of life?) and my mind is blown. Chocolate Tofu Tarts? Why not? Taking risks is good - so here's a rich, sweet, creamy dessert with all the health kicks - and if you weren't told that the secret ingredient was tofu you'd never [Read more...]
