Here's a quick update on something that really worked out last night - Chicken and Quinoa Burgers. I opened the fridge to find only a small portion of ground chicken, too little to make burgers, and I needed to come up with something to fill them up. Why not quinoa? I previously made quinoa patties, which were very tasty, so why not make this? I'm a fan of quinoa, but I do admit it does get boring with endless tabboulehs and salads. Has it really been that long since I posted? It seems like my Drafts folder is filled to the brim... I've been busy with an incredible happening taking place here - our annual winter to summer changeover. I was inspired by another Foodgawker member to attempt a new spin on quinoa fritters. It's not that I mind broccoli, I'm just not usually drawn to it - this way of cooking it is fantastic, without any of that broccoli flavor. Frying up the fritters over a bit of oil really gives the quinoa crunchiness and extra flavor.
